Breaking Bread Pizza Dough

1 Cup warm water

2 1/4 teaspoons active dry yeast

1 tablespoon honey (or sugar)

2 teaspoons salt

2 tablespoons olive oil

3 cups bread flour (you may need more or less depending on your flour and your kitchen temp)

1.  Fill a liquid measuring cup with your water.  Water must be between 105 and 115 degrees.  Stir in yeast and honey or sugar and let it sit for 5-10 minutes until it bubbles and foams.  While this is proofing measure the bread flour, salt and olive oil into a stand mixer bowl.  When the yeast mixture is done add it to the flour mixture and mix on low speed just until things are combined.  Then, mix on #2 speed until your dough isn't sticky anymore to your touch.  Coat a large glass bowl with a light coating of olive oil and transfer your dough to the bowl.  Turn your dough over in the bowl lightly coating all sides.  Cover the bowl with plastic wrap and set it on the counter next to the oven with the oven set at 300.  Let the dough rise 1-2 hours.  Trace your pizza pan/stone onto parchment paper and cut it out.  When the dough has doubled in size it down and it's ready to use!  Lightly oil your clean countertop and spread the dough out with your hands into a round circle.  Transfer it onto your parchment lined pan/stone, spread with sauce and toppings, bake at 500 degrees until you're happy with the looks and enjoy!
